When you're looking for Hawaiian food catering near you, one of the first things you'll notice is that catering menus list quantities differently from regular restaurant menus. A pan might say it serves 15, 30, or 60 people, but what does that actually mean when you're putting together a meal?
At Waiāhole Poi Factory, our catering menu includes traditional Hawaiian dishes available in different pan sizes, along with foods ordered by the piece, cup, or pound. Understanding these distinctions can help you read our menu and prepare the right questions before placing an order.
What Does a Catering Pan's Serving Count Mean?
A serving count tells you approximately how many portions a particular pan provides. It doesn't necessarily mean that one pan contains enough food to provide that number of people with a complete meal.
For example, our Hawaiian catering menu lists a small pan of Kalua Pig at 15 servings, a medium pan at 30 servings, and a large pan at 60 servings. Those numbers describe portions of Kalua Pig, not full Hawaiian plates with rice, poi, and sides.
Our published catering information indicates that serving sizes vary, with approximately three to four ounces per serving. How much each guest eats depends on what else is being served and individual preferences.
This is why it's important to look at the entire food selection rather than assuming a single pan's serving count represents the number of complete meals.
Why Do Different Catering Dishes Have Different Serving Counts?
Not every dish on our catering menu has the same serving estimate, even when the pan sizes are labeled small, medium, or large.
Here's a comparison from our published menu:
These differences mean that choosing the same pan size for every item won't necessarily give you matching numbers of servings. A medium pan of Lomi Salmon, for instance, has a different published serving estimate from a medium pan of Kalua Pig.
Rather than treating all medium pans as interchangeable, compare the listed quantity for each specific dish. This is particularly important when you're combining main dishes, sides, and rice.
Why Are Laulau, Poi, and Desserts Listed Differently?
Some of our catering items aren't sold in pans at all. Understanding their ordering units makes the menu easier to navigate.
Laulau Is Sold by the Piece
Our Laulau contains pork and a touch of butterfish wrapped and steamed in taro leaves. For catering, it's listed individually rather than by the pan.
That means you'll need to choose the number of pieces you want to order. The number you need depends on whether laulau will be a main part of the meal or one of several dishes available.
Fresh Milled Poi Is Sold by the Cup or Pound
Our catering menu lists fresh milled poi in four-ounce cups or by the pound. These options give you different ways to order poi depending on how you intend to serve it.
It's also important to distinguish fresh milled poi from our hand-pounded poi. Our hand-pounded poi is a separate specialty made using a traditional board and stone, offered at our original Waiāhole location on Wednesdays and Sundays, subject to availability.
Hand-pounded poi should not be assumed to be part of a standard catering order. Call us if you're specifically interested in it.
Kulolo and Haupia Have Their Own Ordering Units
Our catering menu offers Kulolo by the two-ounce piece or by the pound, while Haupia is sold by the piece.
If you want to offer dessert to everyone, consider how many pieces you plan to provide and whether guests will have other dessert options. Check the available ordering units on our catering menu.
What Should You Check Before Confirming Your Catering Order?
Beyond the food quantities, it's helpful to understand our ordering requirements before you finalize your plans.
Our published catering terms require a minimum of 48 hours' notice. For parties with more than 40 people, we require one week's notice. A 50% deposit is due when the order is confirmed, and the published terms call for full payment one week before the event. A 15% gratuity applies to catering orders, and prices are subject to change.
For orders placed close to the minimum notice period, please contact us to clarify the applicable payment timing.
Before confirming your order, make sure you've discussed the dishes you want, the relevant serving estimates, and any pickup or other arrangements you may need. If your group has food allergies or dietary restrictions, ask us about ingredients and preparation rather than assuming a dish is suitable based on its name.
Where Can You Review Our Full Hawaiian Catering Menu?
You can find our published food selections, serving estimates, and ordering terms on our official catering page.
